I often eat leftovers for lunch, but sometimes a good sandwich just hits the spot, like these Everything Bagel Chickpea Salad Sandwiches.
14 oz. can chickpeas, drained and rinsed
1/4 cup mayonnaise (can substitute vegan mayonnaise)
3 Tbsp. sweet pickle relish
2 tsp. prepared dijon mustard
2 Tbsp. everything bagel seasoning
1/4 tsp. ground black pepper
For serving: Sliced whole-grain or sprouted-grain sandwich bread
Lettuce or greens (such as baby spinach, arugula, or microgreens)
Thinly sliced cucumber
