Lavender Mint Syrup
Lavender Mint Syrup is a fun and refreshing way to use some of the herbs that are abundant in mid-summer! It’s delicious mixed with soda water, lemonade, iced tea, coffee - any of your favorite summer beverages are better with this herbal syrup!

Ingredients
2 cups water
2/3 cup granulated sugar
1 Tbsp. dried lavender
3 sprigs fresh mint
Instructions
- Combine all ingredients in a small sauce pan.
- Heat over medium heat until just below a boil, stirring occasionally - the sugar should be dissolved by this point.
- Remove the pan from the heat and let stand for 30 minutes to allow the lavender and mint infuse the syrup, and to cool.
- Strain the syrup through a coffee filter or cheesecloth into a bottle or jar with a lid.
- Store the syrup in the refrigerator for up to 1 week. Note: To extend the shelf life a bit longer, you can add 1-2 Tbsp. vodka to the batch, after cooling.
- Serving suggestions:
- Combine 8 oz. sparking water, 2 oz. syrup, and 1 oz. half and half over ice for an Italian soda
- Combine 8 oz. cold brew coffee, 1-2 oz. syrup, and 1 oz. half and half over ice for an iced latte
- Combine 8 oz. lemonade and 2 oz. syrup over ice for herbal lemonade
- Combine 8 oz. unsweetened brewed iced tea and 2 oz. syrup for herbal sweet tea
