Ingredients

For the smoothie:

1 small golden beet, peeled and diced

1 cup frozen pineapple chunks

1 cup frozen mango chunks

1-inch fresh ginger, peeled

1 tsp. ground turmeric

14-oz. can full-fat coconut milk

1/2 cup orange juice


For topping:

Granola of your choice

Fresh fruit of your choice

Instructions

  1. In a high-speed blender, combine diced golden beet, frozen pineapple and mango, ginger, turmeric, coconut milk, and orange juice. Blend until smooth. 
  2. Serve immediately. Pour smoothie into bowls and top with your choice of granola, nuts, seeds, and/or fresh fruit.
