Movie Night Cookie Bars

These Movie Night Cookie Bars pack all your favorite concession-stand treats into one snackable cookie! Candy, popcorn, and a browned-butter base make these the perfect salty-sweet movie night delights.

My browned-butter cookie bars are always a hit, and one day I decided to try mixing them up with my favorite movie theater concessions: popped, buttery popcorn, Reese’s Pieces and Raisinets candies, finished with a generous sprinkle of flaky salt - yum! These are my favorite mix-ins, but you could certainly add any of your favorite chocolate- or nut-based candies. I’m not sure how fruity or gummy candies might work, but if you try it, let me know! Just don’t skip out on the popcorn!

The best feature about these cookie bars is that they come together in one bowl and don’t require anything more than a spatula to mix. (Not counting the skillet to brown the butter, of course.) Press the dough into a pan, and bake until just set. These bars get crisp around the edges, but stay tender in the center, making perfect bites for any preference.

Ingredients

1 cup (2 sticks) unsalted butter

1 1/2 cups brown sugar, loosely packed

2 large eggs

1 Tbsp. vanilla extract

2 cups all-purpose flour

1/2 tsp. baking soda

1/2 tsp. sea salt

2/3 cup Reese’s Pieces candy

2/3 cup Raisinets candy

2 cups popped popcorn

Generous pinch of flaky sea salt

Instructions

  1. Preheat oven to 350 degrees F. 
  2. Place the butter in a medium skillet over medium heat. As the butter melts, it will begin to sizzle and pop. Allow the butter to cook and brown until the popping subsides. Do not stir! If you see brown bits in the pan and smell a nutty aroma, your butter is done. Set aside to cool for a few minutes. 
  3. Use a pastry brush to brush the bottom and sides of an 9x13-inch baking pan with the browned butter to grease the pan. 
  4. In a large mixing bowl, stir together the dry ingredients: flour, baking soda, salt. Add remaining wet ingredients: browned butter, brown sugar, eggs, vanilla. Stir together until just combined. Add candy and popcorn, and stir until evenly distributed. 
  5. Spread the batter in the prepare baking pan into an even layer.
  6. Bake at 350 degrees F for 25-30 minutes, until brown around the edges and just set in the center. 
  7. Immediately after removing from the oven, sprinkle the top of the bars with a generous pinch of flaky sea salt. 
  8. All the bars to cool completely before cutting and serving.
