I know many people are in full-blown pumpkin-everything mode, but I’m still relishing in apple season. I love apples! Former coworkers used to tease me often because I had a sliced apple with my lunch every.single.day. At my going-away party, they even served one of my favorite snacks - apples with peanut butter.
I’m not sure when my love affair with apples started…maybe back in college, but probably earlier. The abundance of local apples is one of my favorite things about living in the Pacific Northwest. I remember harvesting apples and making applesauce and apple butter with my grandparents as a kid. I enjoyed fresh-pressed cider from the farms surrounding my college town as a young adult.
Now I have a new tradition to add to my apple memories! This Apple Cheddar Snack Cake is definitely going to be a recipe I look forward to once apple season arrives each fall. It’s not too sweet, and a little bit savory, which makes it a great treat with a hot beverage for an afternoon snack, especially as the days get shorter and cooler.
