Apple Cheddar Snack Cake

Yes, you read that right. Cheese in cake. This cake combines the classic pairing of apples and cheddar into a little bit sweet, a little bit salty, tender cake that’s perfect for chilly autumn afternoons.

I know many people are in full-blown pumpkin-everything mode, but I’m still relishing in apple season. I love apples! Former coworkers used to tease me often because I had a sliced apple with my lunch every.single.day. At my going-away party, they even served one of my favorite snacks - apples with peanut butter.

I’m not sure when my love affair with apples started…maybe back in college, but probably earlier. The abundance of local apples is one of my favorite things about living in the Pacific Northwest. I remember harvesting apples and making applesauce and apple butter with my grandparents as a kid. I enjoyed fresh-pressed cider from the farms surrounding my college town as a young adult.

Now I have a new tradition to add to my apple memories! This Apple Cheddar Snack Cake is definitely going to be a recipe I look forward to once apple season arrives each fall. It’s not too sweet, and a little bit savory, which makes it a great treat with a hot beverage for an afternoon snack, especially as the days get shorter and cooler.

Apple Cheddar Snack Cake

Ingredients

1 1/2 cups all-purpose flour

1/3 cup brown sugar, packed

1 tsp. baking soda

1/2 tsp. kosher salt

1/2 tsp. dried thyme

1/4 tsp. ground nutmeg

1/3 cup extra virgin olive oil

1 cup unsweetened applesauce

1 cup grated extra-sharp cheddar cheese

1 small-medium tart apple, peeled and diced

2/3 cup walnuts, chopped

Instructions

  1. Preheat oven to 350 degrees F. Lightly grease a 9x9 square baking dish, and set aside.
  2. In a large bowl, combine flour, brown sugar, baking soda, salt, thyme, and nutmeg. Whisk to combine, breaking up any clumps of brown sugar.
  3. Add grated cheddar cheese to dry ingredients, and stir to coat cheddar. This will help distribute the cheese evenly throughout the batter.
  4. Make a well in the center of the dry ingredients and add olive oil and applesauce. Stir gently to combine.
  5. Just before the batter comes together, add diced apples, and stir until incorporated.
  6. Pour batter into prepared baking dish. Scatter chopped walnuts over the top of the batter, and press them in lightly.
  7. Bake at 350 degrees F, 40-45 minutes or until toothpick inserted in the center comes out clean.
