I absolutely love BBQ sauce, all year round. And I love dipping sweet potato fries in BBQ sauce. So when I saw a recipe for lentils in BBQ sauce served over potatoes, my interest was piqued. I was disappointed to see a store-bought BBQ sauce used in the recipe! While convenient, yes, those BBQ flavors are easy to impart with some pantry ingredients, and the result is far less sugar and way more flavor than pre-made BBQ sauce.

4 large sweet potatoes
2 Tbsp. avocado oil
1 tsp. kosher salt
1/2 tsp. ground black pepper
For BBQ Lentils:
2 Tbsp. avocado oil
1 medium yellow onion, diced
1 Tbsp. smoked paprika
2 tsp. chili powder
1 tsp. garlic powder
1 tsp. Italian seasoning
1 tsp. mustard powder
1 tsp. kosher salt
1 14.5-oz. can crushed tomatoes
2 cups low-sodium vegetable broth
2 Tbsp. molasses
2 Tbsp. apple cider vinegar
1 Tbsp. maple syrup
1 Tbsp. Worcestershire sauce
1 Tbsp. ketchup
1 cup dry brown lentils, rinsed and picked over
