Black and Blue Smoothie

Do the holiday weekend celebrations have you feeling left black and blue? There’s still time to make this Black and Blue Smoothie, which won’t leave you feeling bruised and tired!

We are approaching peak summer berry season, when there’s multiple varieties of delicious summer berries to pick from. Blueberries and blackberries both grow in abundance here in the Pacific Northwest, and I’m lucky to have family sources for both, which keep my freezer stocked year-round!

This smoothie has blueberries and blackberries, which are packed with antioxidants and fiber. I’ve added Greek yogurt and peanut butter for protein, and the coconut milk brings in some healthy fat, making this a well-rounded smoothie to start your day (or pick up your afternoon!). This smoothie is satisfying, but light, to keep you energized and fueled for post-holiday recovery. Take advantage of berry season, and add this smoothie to your rotation this summer!

Add everything to a high speed blender, and puree until smooth.

Ingredients

1 cup frozen blueberries

1 cup frozen blackberries

6 dates, pitted

2 Tbsp. peanut butter (or nut butter of your choice)

1/2 cup plain, unsweetened Greek yogurt

1 cup coconut milk (or plant-based milk of your choice)

1/2 tsp. ground cinnamon

Juice of 1 lime

Instructions

  1. Add all ingredients to a high-speed blender, and blend until smooth.
  2. Pour into a glass, serve immediately, and enjoy! Makes 1 large or 2 medium smoothies.
