Everything Seasoned Savory Granola is mostly salty, and just a tiny bit sweet, and it’s the perfect crunchy topping for all your summer salads and cottage cheese bowls!
I took a pause on sharing granola recipes on the blog because I have a lot of them, but this one is different, and I can’t hold it back. This is a SAVORY granola. Yes, savory, not sweet. It’s loaded with nuts and seeds, and then coated in lots of everything bagel-style seasoning. It makes an amazing addition to salads, or my favorite way to enjoy it: on cottage cheese.
I love cottage cheese with cherry tomatoes, especially in the summer. Sprinkling this Everything Seasoned Savory Granola on top just makes it all the more salty and satisfying! I also add some sliced cucumbers and microgreens to make this a fiber and antioxidant-rich hearty snack (or meal - this would be an amazing, refreshing summer lunch!). Plain, unsweetened Greek yogurt would also work really well instead of cottage cheese.
Since this is a savory granola, I needed a neutral flavor to help hold everything together, and not too much of something sweet like maple syrup or honey - that’s where the egg white comes in. It’s sticky, but neutral in flavor, so it’s a perfect binder here. I did add a little honey for a touch of sweetness to counter the salty and help with the sticking power. I have not experimented with making this recipe vegan, so I cannot confirm the success of trying to substitute the honey or egg white with any alternatives.
I plan on making lots of batches of this granola to enjoy with salads and fresh tomatoes all summer long!
