My family loves tuna melts. It’s been an easy, go-to weeknight dinner most of my life. My childhood version was definitely topped with slices of good old American cheese and often used up whatever stray bread we had on hand (hamburger buns, hot dog buns, English muffins, whatever needed to be used). Over the years, they evolved to sometimes include fresh sliced tomatoes (especially in the summer) and less processed cheese.
For the past few years, I’ve been turning anything and everything tuna into creations inspired by spicy tuna sushi rolls. Tuna and sweet chili sauce are a flavor pairing dream. Salty, briny tuna fish with sweet, spicy chili sauce plus creamy mayonnaise - give it to me any day. So naturally, I had see how it worked as a tuna melt.
Let me tell you - it worked out better than I could have dreamed. Crispy English muffins topped with a sweet chili tuna spread, followed by melty havarti cheese, then topped with cool, creamy avocado and toasted sesame seeds - it’s a new comfort classic in my house. These Sweet Chili Tuna Melts have been on repeat, not just because I’ve been testing the recipe and shooting the pictures. Make these for dinner as soon as you can!

14 oz. chunk light tuna, in water, drained
1/2 cup mayonnaise
3 Tbsp. sweet chili sauce
1-2 tsp. sriracha (depending on your preferred spice level)
1/2 tsp. toasted sesame oil
3 green onions, white and light green parts, thinly sliced
1 Tbsp. toasted sesame seeds
4 English muffins, split
4 slices havarti cheese
2 small avocados, peeled, sliced
Additional toasted sesame seeds or Gomasio, for garnish
