Warm Winter Fruit Compote

Warm Winter Fruit Compote is nice to have on hand during the cold weather, and makes a great topping for yogurt, oatmeal, waffles, ice cream, and more!

Here in the Pacific Northwest, the winter months don’t have a lot of fresh fruit to offer. But we do have an abundance of local apples and pears from the fall harvest, as well as dried stone fruits like apricots and cherries from the summer. These all come together in this delicious Warm Winter Fruit Compote that makes a delicious seasonal topping for lots of breakfast options, such as yogurt, oatmeal, waffles, and pancakes, or even a dessert like rice pudding or ice cream!

The apples and pears become soft, and the dried apricots and cherries become plump while cooking in the apple cider. Just a touch of extra sweetness from maple syrup and warmth from spices like cinnamon and nutmeg make this compote a lovely seasonal condiment.

There’s minimal prep involved to make this compote, and it can easily be made ahead and stored in the fridge for the week ahead. It’s so convenient to add on top of yogurt with some granola for a parfait, or to stir into warm oatmeal for breakfast. Warm Winter Fruit Compote is a delicious and nutritious way to add color and fiber to your winter mornings!

So good. I added several drops of liquid smoke and a little sweet paprika since I was slightly short on smoked.

I made this last night and we loved it! It ended up being rather warm here, so I did it in my air fryer rather than the oven and used extra cilantro rather than the 1/2 c parsley in the sauce, but otherwise followed the recipe to a T. The spice blend was SO good, and the spices plus the sauce made for such a flavorful dish, which can be tough with the blander base ingredients - potatoes, cauliflower, chickpeas. I had everything on hand, except for the cauliflower, which I went out and bought, and the parsley, hence me using extra cilantro instead. For anyone who is on the fence because there weren’t any reviews, please try this. There is so much flavor, but it’s still light and fresh. Most of the ingredients are pantry staples and it’s super easy to make. Thank you - this will be going into our rotation! 😊
