Here in the Pacific Northwest, the winter months don’t have a lot of fresh fruit to offer. But we do have an abundance of local apples and pears from the fall harvest, as well as dried stone fruits like apricots and cherries from the summer. These all come together in this delicious Warm Winter Fruit Compote that makes a delicious seasonal topping for lots of breakfast options, such as yogurt, oatmeal, waffles, and pancakes, or even a dessert like rice pudding or ice cream!
The apples and pears become soft, and the dried apricots and cherries become plump while cooking in the apple cider. Just a touch of extra sweetness from maple syrup and warmth from spices like cinnamon and nutmeg make this compote a lovely seasonal condiment.
There’s minimal prep involved to make this compote, and it can easily be made ahead and stored in the fridge for the week ahead. It’s so convenient to add on top of yogurt with some granola for a parfait, or to stir into warm oatmeal for breakfast. 1 firm pear, cored, thinly sliced
1/2 cup whole dried apricots
1/2 cup dried cherries
1 cup apple cider
2 Tbsp. pure maple syrup
1/2 tsp. ground cinnamon
1/8 tsp. ground nutmeg
Pinch of salt
