Apricot Curry Dip

I think New Year’s Eve calls for snacks - lots of chips, dips, veggies, and assorted bites to graze on through the evening. Even though most of us are celebrating at home this New Year’s Eve, you can still make the evening fun and memorable with delicious food and drinks. This Apricot Curry Dip is a perfect addition to your snack spread, with new flavors for the new year!

I love the earthy flavor of yellow curry powder. Paired with the sweet, yet tart dried apricots, and freshness of the green onions, this curry dip is bold and bright. The mango chutney adds additional tang and spice, but if you don’t have or can’t find mango chutney, substitute apricot jam instead. I do recommend finding mango chutney though - it’s widely available in most grocery stores. Once you try it, you’ll definitely find more uses for it! It’s amazing in grilled cheese, on sandwiches, or on top of roasted vegetables.

Serve this dip with your favorite crackers, chips, and/or veggies for dipping. Leftover dip (if there is any!) would make a great sandwich spread. Cheers to you, and cheers to health, happiness, and many Joyful Platefuls in the new year!

The flavors of this dip definitely improve over time, so make it at least several hours in advance and let it rest in the refrigerator before serving. Serve Apricot Curry Dip with crackers or flatbread for dipping.

Apricot Curry Dip

Ingredients

8 oz. neufchâtel cheese (light cream cheese)

1/4 cup plain Greek yogurt

1/2 cup diced dried apricots

1/2 cup thinly sliced green onions

2 Tbsp. apricot jam

2 tsp. yellow curry powder

1 lime, juiced

Assorted crackers, chips, and/or vegetables for dipping

Instructions

  1. Add all ingredients to a large bowl, and mix well to thoroughly combine.
  2. Transfer to a serving bowl, cover tightly, and refrigerate for at least 4 hours. The flavors of this dip definitely get better as this dip rests!
  3. Serve chilled with assorted crackers, chips, and/or vegetables for dipping.
