After more than a year of schooling and working from home, I was feeling stuck in a lunchtime rut. I often eat leftovers for lunch, but sometimes a good sandwich just hits the spot. These Everything Bagel Chickpea Salad Sandwiches definitely put a new twist on lunch the past couple months, and I’ve really been enjoying them!
I based this recipe on my basic tuna salad, which includes mayonnaise, sweet pickle relish, and a little bit of dijon mustard. Instead of tuna though, I mashed one can of drained and rinsed chickpeas as the base. And because everything bagel seasoning makes everything better, I added a good amount of seasoning for extra flavor. Served on grainy bread with greens and thinly sliced cucumbers, this sandwich is far better than one you can get at any sandwich chain (and you know what’s in it!).
This recipe makes at least three good portions, and keeps very well for a few days in the refrigerator, so it’s a great make-ahead recipe for easy weekday lunches. I’ve been enjoying not just as a sandwich, but also spread on crackers and veggies, too. If you use vegan mayonnaise in place of regular mayonnaise, it’s fully vegan - easy to adapt! Try this new twist on your next lunchtime sandwich!

14 oz. can chickpeas, drained and rinsed
1/4 cup mayonnaise (can substitute vegan mayonnaise)
3 Tbsp. sweet pickle relish
2 tsp. prepared dijon mustard
2 Tbsp. everything bagel seasoning
1/4 tsp. ground black pepper
For serving: Sliced whole-grain or sprouted-grain sandwich bread
Lettuce or greens (such as baby spinach, arugula, or microgreens)
Thinly sliced cucumber
