Orange Cardamom Granola

I mentioned in one of my What’s in Season Wednesday posts over on social media that I cannot get enough oranges this year. With all these oranges hanging around, I started thinking about other ways to use them and enjoy their bright citrusy flavor. I was also preparing to share my Sweet Potato Breakfast Bowls with you, which include granola. Well, sweet potatoes and oranges are a delightful flavor pairing, as are sweet potatoes and warm spices like cardamom and cinnamon. Thus, Orange Cardamom Granola was born.

This granola variation is a solid winter option for your yogurt + granola pairings. Winter is citrus season, so let’s celebrate it as often and in as many ways as we can. I enjoy cardamom year-round, but it feels especially cozy during the winter months. Plus, it has a slight citrus note to it on its own, so marrying it to orange zest in this granola just feels right. Nutritionally, cardamom aids in healthy digestion - what better way to start your day?

Assemble your ingredients.

Dry granola ingredients, then wet ingredients, then mixed granola
Combine your dry ingredients in a large bowl. Whisk together wet ingredients separately, then pour over dry ingredients and stir until everything is moistened.

Bake granola on a large sheet tray in an even layer. Once fully cooled, transfer to an airtight container to store.

Ingredients

3 cups old-fashioned or rolled oats

1 cup sliced raw almonds

1/2 cup hemp hearts

1/2 cup pepitas (pumpkin seeds)

2 tsp. ground cardamom

1 tsp. ground cinnamon

1/2 tsp. sea salt

¼ cup coconut oil, melted

⅓ cup pure maple syrup

1 tsp. pure vanilla extract

Zest of 1 orange

Instructions

  1. Preheat oven to 375 degrees F. Line a large rimmed baking sheet with parchment paper or silicone baking mat, and set aside.
  2. In a large mixing bowl add the oats, almonds, hemp hearts, pumpkin seeds, cardamom, cinnamon, and sea salt. Stir to combine.
  3. Stir together the coconut oil, maple syrup, vanilla extract, and orange zest. Add to the dry ingredients, and stir until everything is combined and moistened.
  4. Transfer the granola mixture to the prepared baking sheet. Spread out into an even layer. Bake for 25-27 minutes, stirring once halfway through.
  5. Allow the granola to cool on the baking sheet, which will help it become crisp and crunchy.
  6. Store in air tight container at room temperature for up to 1 week.

So good. I added several drops of liquid smoke and a little sweet paprika since I was slightly short on smoked.

I made this last night and we loved it! It ended up being rather warm here, so I did it in my air fryer rather than the oven and used extra cilantro rather than the 1/2 c parsley in the sauce, but otherwise followed the recipe to a T. The spice blend was SO good, and the spices plus the sauce made for such a flavorful dish, which can be tough with the blander base ingredients - potatoes, cauliflower, chickpeas. I had everything on hand, except for the cauliflower, which I went out and bought, and the parsley, hence me using extra cilantro instead. For anyone who is on the fence because there weren’t any reviews, please try this. There is so much flavor, but it’s still light and fresh. Most of the ingredients are pantry staples and it’s super easy to make. Thank you - this will be going into our rotation! 😊
